<p>In the recent years man has improved in his quest for scientific knowledge. He has gone far and beyond and has reached the depth of what some may consider madness, but others know as cloning.</p>
<p>Of course why should we worry, right? He’s only cloning an animal, which has nothing to do with us personally, right?</p>
<p>What if man genetically engineered a plant? What if he used that same genetic engineering to alter the food that we consume? Would you be worried then?</p>
<p>While many of us may assume that scientists would not alter the DNA of the foods that we eat, they are certainly doing so. Changing the structure of a plant’s DNA means scientists can extend the life of plants so that we can have a particular food all year round.</p>
<p>For example, scientists can now alter the DNA of a tomato so that is resists freezing temperatures. Scientists have also used DNA altering to create bigger animals such as cows and pigs, for consumption. DNA isn’t just used in food, however.</p>
<p>Scientists have discovered new ways to produce vaccines used to fight disease with genetic engineering. The same technology may also help reduce or even eliminate the risk of diseases such as emphysema, muscular dystrophy and cystic fibrosis. Yet, at what cost is this all being done?</p>
<p>Many believe there are risks when it comes to altering DNA, whether it is in animals, plants or man. For instance, an allergic reaction could easily occur when DNA is altered in foods.</p>

<p>For example, <strong>high fructose corn syrup</strong> is a sugar substitute often found in many food products like breakfast cereal and juice. The sugary substitute, which comes from cornstarch, is processed into a combination of fructose and sucrose sugars.</p>

<p>If you’re diabetic, you’re probably praising the idea of a sugar substitute. But did you know that substitutes like <strong>artificial sweeteners</strong> may actually do more harm than good?</p>
<p>These sugars are chemicals used in replace of the sugar (sucrose) found in everyday use. They are known as food additives and can copy natural sugars that are supposedly less in calories. Many of these sugar substitutes are sweeter than the regular stuff; it cheaper for the manufacturer to package.</p>
<p>There are actually five sugar substitutes that are approved by the FDA in the United States. They are acesulfame potassium, aspartame, neotame, saccharin and sucralose. Two of those five sugars are of major concern to many researchers. They are aspartame and sucralose.</p>
<p>Aspartame was founded in 1965 by a researcher named James M. Schlatter. Schlatter was working on an anti-ulcer drug when he accidentally discovered that aspartame was edible and sweet.</p>
<p>Aspartame is actually a crystalline powder that is derived from the amino acids known as aspartic acid and phenylalanine. Over the years aspartame has been used in many products including beverages, chewing gum and frozen desserts.</p>
<p>It was first thought that aspartame caused brain tumors in lab rats. However, in 1981 Arthur Hull Hayes a man who had just been appointed as commissioner of the FDA, approved aspartame. Yet interestingly enough, Hayes was also had several close friends that were a part of the artificial sweeteners manufacturers.</p>
<p>Imagine that.</p>
<p>Sucralose is a chlorinated sugar that is extremely sweeter than natural sugar. It derived from sucrose when chlorine atoms replace hydroxyl groups. It is found in baked goods, chewing gum, gelatins and frozen treats. Although the FDA approves it, Sucralose is thought to have some possible side effects.<strong><a title="migraine headaches" href="http://www.seaaloes.com/migraine-headaches" target="_blank"> Migraine headaches</a></strong> and damage to thymus glands are both possible effects from using sucralose.</p>

<p>Everywhere you look you will find foods that contain the words, “<strong>certified organic</strong>” on their packaging. If you’re anything like me, you may be wondering just what the heck those words really mean.</p>
<p>For the farmers, this simply means the foods must be grown using resources that give back to our environment according to US food standards. For people like you and I, it means we’re eating foods that are good for us!</p>
<p>These foods are grown without synthetic chemicals such as pesticides, additives and anything else that can harm our bodies. This also means that soil and water used for crops must have been chemical free for several years. They must also undergo yearly inspections of their farmland and comply with standards for storing and transporting of the foods as well.</p>
<p>Of course farmers could simply say that their foods are all natural, but how are we to know they really are? We might be able to trust our local farmers, but when we purchase foods from our local health food or grocery store, we have no idea if their foods are really chemical-free. That is why the US makes sure that we are getting what we pay for by certifying the products that come from those farmers.</p>
<p>In general there are 3 different levels of certification that the US goes by:</p>
<p>Products that are natural and contain no artificial ingredients or additives are at the 100% level.</p>
<p>Those products whose ingredients contain no more than a fifth of unnatural ingredients or additives are at the 95% level. Both of these labels are approved by the USDA and will carry a seal to let consumers know.</p>
<p>There is a third level that is only 70% all natural, but these products cannot carry the USDA seal. They can however carry a label that states they are made with organic ingredients. Anything that is less than that cannot state otherwise and that is great news for us.</p>
